Plan on preparing this recipe for about 45 minutes.

Ingredients for a cake:

  • 400g flour
  • 1 pinch of baking powder
  • 4 packs of vanilla sugar
  • 150g ricotta
  • 275g butter
  • 100g sugar
  • 1 pinch cinnamon
  • 500 ml cream
  • 2 packs of cream stiffener
  • 450 g rosehip puree
  • Powdered sugar for sprinkling
  • Flour for the work surface
  • Grease for the molds

Preparation:

  1. Make a shortcrust pastry from 250 g flour, baking powder, 2 packets of vanilla sugar, ricotta and 175 g butter and knead it well. Divide the dough into four pieces and roll out. Place one piece of dough on the greased bottom of a springform pan (28 cm diameter) and prick the dough several times.
  2. Preheat the oven to 200°C (fan oven 180°C). For the streusel, mix 150 g flour with 75 g sugar, 1 packet of vanilla sugar, cinnamon and 100 g butter in flakes and work them into streusel with your hands. Place 1/4 of the streusel mixture on each dough base.
  3. Bake the bases in the oven for about 15 minutes.
  4. After baking, remove each layer from the edge of the springform pan and divide one layer into 12 to 14 cake pieces. Allow the floors to cool.
  5. For the filling, beat the cream with the remaining sugar and vanilla sugar and the cream stiffener until stiff. Pour the whole thing into a piping bag fitted with a serrated tip.
  6. Spread three baked cake layers with 1/3 of the rosehip puree each and pipe 1/3 of the cream on each. Then assemble the bases into a cake. Put the base divided into pieces last.

It is best to chill the Christmas cake for three hours and sprinkle it with powdered sugar before serving.
