Ingredients:( This recipe can be both made with chicken and vegetables. In case you are using chicken use 250 grams of boneless chicken and if you want vegies use mixed vegies cut into small dices.
8 Oz (225g) spaghetti
4 cloves garlic, thinly sliced
1/4 cup olive oil
Red pepper flakes (optional)
Salt and black pepper to taste
Grated Parmesan cheese (optional)
Instructions:
Cook spaghetti according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes (if using).
Cook for about 1-2 minutes or until the garlic is lightly golden. Be careful not to burn it . At this point you have to add the chicken or the vegetables into the pan and fry it for two minutes.
Add a little amount of water in case of vegetables and cook for another 5 minutes for the vegetables to soften.

In the same skillet, add the minced garlic and ginger. Stir-fry for about 30 seconds.
Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
Return the cooked chicken to the skillet, add soy sauce, salt, and black pepper. Stir-fry for an additional 2 minutes to combine everything.

4 ripe tomatoes, sliced
8 Oz (225g) fresh mozzarella cheese, sliced
Fresh basil leaves
Extra-virgin olive oil
