Sandwiches With Avocado egg Paste

Another healthy Polish breakfast recipe to help kickstart your day.



  • 2 slices rye bread
  • 2 eggs
  • 1 teaspoon olive oil
  • 2 tablespoons yogurt
  • 1/2 avocado
  • 1 tomato (medium-sized)
  •  1 teaspoon chives
  • 3 leaves of arugula
  • 1/2 tsp salt
  • 1 pinch black pepper
  • 1 pinch sweet pepper


  1. Hard-boil the eggs.
  2. Mash the avocados with a fork, add olive oil, salt, and pepper. Dice the chives.
  3. Peel the eggs cut them into small cubes, or blend them to obtain a smooth consistency.
  4. Add the previously prepared avocado, chives, and natural yogurt to the egg mass and mix.
  5. Season with salt, pepper, and sweet paprika.
  6. Transfer to sandwiches, sprinkle with rocket, and serve with tomato.
