2. Toast With Poached Egg and Vegetables

A super simple breakfast recipe with eggs, bread, and vegetables.



  • 2 slices rye bread
  • 2 eggs
  • 1 teaspoon olive oil
  • 1/4 pieces red pepper
  • 1/2 pieces avocado
  • 4 cherry tomatoes
  • 1 pinch salt
  • 1 pinch pepper


  1. Bake the bread in a toaster.
  2. Wash the paprika, hollow it out and cut it into sticks. Wash and peel the avocados and cut them into sticks as well.
  3. Boil water and salt in a pot. Crack the eggs separately into a bowl or cup.
  4. When the water starts to boil, create a vortex with a spoon. Pour the egg in the very center of the whirl and gently fish it out after 2-3 minutes. Do the same for the second egg.
  5. Brush the toasts with olive oil, put the avocado and paprika, and the egg on top
  6. Season with salt and pepper. Serve with cherry tomatoes.
