1. Colorful Shakshouka With Vegetables

Ingredients

  • 2 Eggs
  • 1 tsp Olive oil
  • 1 onion (small, sliced)
  • 1 Clove garlic 
  • 1/2 pieces red pepper
  • 1/2 pieces pepper
  • 1/4 pieces zucchini
  • 2 tomatoes (medium-sized)
  • 3 tsp arugula
  • 1 pinch hot pepper
  • 1 pinch sweet pepper

Instructions

  1. Heat the olive oil in a frying pan.
  2. Dice the onion and garlic into small cubes and fry in olive oil.
  3. Wash the peppers, hollow them and dice them. Wash the zucchini thoroughly and cut it into slices.
  4. Add the finished vegetables to the pan and stew for about 5 minutes.
  5. Blanch the tomatoes, peel them, dice them, then add them to the vegetables and stew for another 5 minutes.
  6. After this time, make two small cavities in the vegetables with a spoon, insert the eggs into them, cover with a lid, and stew until the eggs are set (about 7 minutes).
  7. Season to taste and serve.
